DAY 162 - Monday December 30th


 
Info: So I stumbled upon something glorious today, a recipe for some tortillas that are 100% Paleo friendly! I of course am doing a little tweaking on them to get them to my liking, but I assure you once I post the recipe you are going to love them! One of the only things I dislike about strict Paleo is that you can never have a tortilla with your Mexican style food.....well not anymore! I ran through 3 variations today, and will be finishing the recipe very soon.....yeah it's that important to me! Can't wait to share it with you guys! And no it's not really Top Secret....I'm just a wiener like that LOL!

Food Log: 


Breakfast: 3 Paleo-tilla tacos with chicken, lettuce, and hot sauce. Dill OOM for fat.

Lunch: 1 larger Plaeo-tada (yeah they even make great tostadas!) With chicken, romaine lettuce, black olives, and fresh salas

Dinner: 3 Paleo-tilla tacos with seasoned ground beef, romaine lettuce, Dill OOM, and hot sauce.


Snack: none


Exercise log: Did a WOD with a little more cardio-centric stuff involved today, really got the sweat rolling!

DAY 161 - Sunday December 29th

 
Info: Loving the Buffalo chicken I have been making, and its a nice break from all beef. Getting back at CrossFit tonight, not feeling as sore as I thought I would, which is a good thing!


Food Log: 

Buffalo Scramble

Breakfast: Buffalo chicken, mushroom, onion, 3 egg scramble (sauteed with clarified butter)

Lunch: Buffalo chicken, mushroom, onion, 3 egg scramble (sauteed with clarified butter) - was so good I ate it again!

Dinner: Buffalo chicken salad, with kalamata olives.

DAY 160 - Saturday December 28th


 
Info: I'm the match director for Eastern Colorado IDPA held at Colorado Rifle Club, and it just so happens the weather was 50 degrees and it was match day! I had to pack and plan a bit today because I didn't want to starve, or eat junk, that's all new for me...the planning thing as some of you can attest LOL. Anyways it worked out well, everything ran smooth and we had a lot of fun! No pictures of food today, was too hard running a match, shooting a match and trying to get photos.....buuuut here are some pics of my competition guns that I am currently using! (sorry for you folks that may not like guns, I do. I use them like one would play golf, they are safe, and they are very enjoyable!)













Top: My IDPA/USPSA production gun, it is an Springfield XDM 9MM 4.5". I have added a Dawson Ice Magwell, Powder River precision trigger kit, a Dawson competition front sight, and a Henning competition rear sight.

Right:  is my USPSA Limited gun a EAA/Tanfoglio Witness Limited chambered in 40 S&W. I have added an XL firing pin, conefit guide rod, grip panels, competition magwell, a flat trigger, and a competition spring all made by Henning. The magazine also have extensions that make them hold 21 rounds for competitions also made by Henning. Anyways just wanted to introduce you to my tools that I use on a regular basis....on to the food and fitness!



Food Log: 

Breakfast: Buffalo chicken breast, broccoli salad, 1 pear, 3 jumbo olives.
 
Lunch: Buffalo chicken breast, Paleo slaw, 1 pear, 3 jumbo olives.

Dinner: Buffalo chicken breast, Paleo slaw, almond butter.

Exercise log: I ran everywhere I went on the range during setup and tear down just to get some exercise in, ran ~1 1/2 miles. Also played hockey for 2 hours later at night for some more exercise as well. I can tell legs are going to be sore tomorrow......

DAY 159 - Friday December 27th

 
Info: Man what a busy few last days, again sorry for delays in getting these up, inevitably its going to happen when I am busy from 430am-11pm. At that point I'd rather wait to post these so at least you guys aren't just reading gibberish! Recipes are coming as well, I've got pictures for a few of them. Please leve me some comments on foods you'd like to see, or if you are trying these recipes! Or even if you think this blog is stupid! Interaction helps motivate me!



Food Log: 

Buffalo Chicken breast, ALMOST makes me want Bleu Cheese dressing!
Breakfast: Burger patty, Broccoli salad, cauliflower garlic mash, and olives.


Lunch: Carne asada street tacos - Lettuce wraps with carne asada, onions, cilantro, avocado and fresh salsa.


Dinner: Buffalo chicken breast (Chicken breast coated with a clarified butter/Franks Red Hot sauce...aka the original buffalo wing sauce), broccoli salad, Paleo slaw and 3 jumbo olives.


Snack: none


Exercise log: none today, need a rest day or 2 to get rid of some nasty soreness from the punishment yesterday!

DAY 158 - Thursday December 26th

 
Info: Got a lot of good stuff done today, was able to bag some bulk chicken breasts (40lbs!), figured out the recipe for the Sweet Tomatoes Broccoli/bacon/cashew salad - literally if you closed your eyes you likely would not be able to tell the difference....and it has no added sugar! Also got pictures for more recipes so I can post them, and got back at the CrossFit workouts. All in all a pretty productive day!

Breakfast: Seasoned ground beef, Cauliflower garlic mash, 3 jumbo olives.

 
Lunch: Seasoned ground beef, Paleo slaw, cauliflower garlic mash.

Exercise log: Decided on an AMRAP (As Many Rounds As Possible) workout tonight, mainly using body weight exercises, let me assure you when you are pushing it, body weight is plenty effective! I got through 7 complete rounds and then 10 crunches, and 10 pull ups. Not too bad for a portly fella! (soon to be former portly fella thank you!)

DAY 157 - Wednesday December 25th

DAY 156 - Tuesday December 24th
 
Info: Getting ready for tomorrow of course, but not too much going on, taking it easy today to allow my CrossFit ravaged muscles a little rest and relaxation. Will be back at the CrossFit on Thurs. Wishing you and yours a Merry Christmas and Happy Holidays!


Food Log: 

Breakfast: Seasoned ground beef, green beans, and pecans for fat.

 
Lunch: Ate at a place called HuHot, which is a Mongolian BBQ place. Cool thing is you pick it, and they cook it. I went with a mixture of: beef, chicken, bean sprouts, onion, mushroom, broccoli, water chestnut, and cilantro. Toss in a little garlic and chili, and was good to go! 


Dinner: Seasoned ground beef, Plaeo Slaw, and guac covered in hot sauce.


Snack: none

 

Exercise log: Light stretching today, resting the next 2 days to allow some soreness to go away, and it's Christmas.....well thats no excuse, but when its torture to move...time to rest just a little bit.

 DAY 155 - Monday December 23rd
 
Info: Yeah so sore is one description, and what I feel is another. It....hurts....to....move..... LOL But its a good hurt. And really what did I expect after not doing much other than being a bump on a log for the past few months? Back at it again tonight though, sore or not!


Food Log: 

Breakfast: Hamburger patty topped with an over easy egg, and green tomatillo salsa. Also ate some carrots and some leftover green beans for veggies.

 
Lunch: Hamburger patty, romaine salad with OOM/hot sauce dressing, 2 pear halves.



Dinner:  Seasoned ground beef, Paleo Slaw, and guacamole, covered with Franks Red hot.

DAY 154 - Sunday December 22nd
 
Info: Well like I had planned, I got my CrossFit on and got after it. About time is all I have to say. Nothing too crazy to start out, but I will be pushing myself pretty hard so that the exercise counts!


Food Log: 

Breakfast: none work up too late, so I had a big lunch

Lunch: Hamburger patty with 3 olive tapinade and OOM, green beans.


Dinner:  Seasoned ground beef salad (romaine) black olives, and OOM/hot sauce dressing, 2 slices of pears.

Exercise log: Ok so got into the workout today, here is what was RX'ed

I must say the 6 or so times I thought I was going to die was well worth it, afterwards I felt good, and finally glad to be back in to working out. Hopefully the back will hold out and this type of activity with strengthen my core and make it a non issue. Oh yeah and my time was 17:42:64.

DAY 153 - Saturday December 21st
 
Info:  Well today was good food wise, not so good workout wise. I had every intention of starting my workouts again tonight and getting this in gear. Instead I went down to the Denver Zoo to check out the Christmas lights display they have. Not a big deal, hung out with good friends and family, but didn't get my workout done. Oh yeah I may have also satyed up till 3am watching movies I have been wanting to see for a long time.... Workouts to start tomorrow, no more excuses.


Food Log:

Info:  Worked a long shift at work today and then had our work Christmas dinner afterwards. Ted's Montana grill was very accommodating to my style of eating, not a bad place to eat. Sorry no pictures again today, they will be back again soon!

Info:  Sorry all got a little behind on the updates, with running back and forth from the hospital, work, and getting ready for Christmas, I have found that I sit down to relax a bit at 11pm, and poof I fall asleep.....weird huh? DAY 150 - Wednesday December 18th

Info: I wish I could say that the excitement from today was wanted excitement.....Daughter with pneumonia had it come back, we took her to the hospital and she had to have a bronchioscopy done....they found a pumpkin seed shell actually stuck in her lung, that's what was causing the pneumonia! She had choked and inhaled it. Good news is even though it is scary watching your daughter get put to sleep for a procedure, she is getting better and will be fine now that the object is out of there! Phew! Through all that, I even managed to get some pictures of my dinner tonight....see what I do for the readers of the Whole360?? LOL Oh yeah and today is day 150! Getting close to the halfway mark!

Info: Got the urge for some Salmon Cakes again, so I made up a double batch, but this time I used half salmon and half canned tuna. Not by choice, but I started the double batch and then looked at my salmon supply and didn't have enough. They turned out pretty good, no complaints from me!




Crab topped Salmon, on a bed of Paleo slaw...mmmmmm

DAY 147 - Sunday December 15th


Info: Finally got a warmer spell of weather out here in CO, so got to go shoot a local IDPA match for the first time in a long while. Was a lot of fun, and perfect 50-60 degree weather! Busted open that crab meat I bought yesterday and made seafood salad with it. Turned out awesome!

DAY 146 - Saturday December 14th


Frank's Red Hot...."I put that Sh** on everything!!
Info: Took a trip to one of my favorite stores today....Restaurant Depot!!! Picked up a whole case of avocado's for $20, and a can of crab claw meat (it was in impulse buy ok???), shredded coleslaw mix, 3 huge jars of various olives,  and a few other things. I was running low on hot sauce so I picked up a gallon of Frank's red Hot.....you know cause I put that sh## on everything!  I love just walking around in there.....where else can you buy a whole goat like its no biggie? Also made up another batch of Paleo Slaw.....I can't get enough of this stuff!





Food Log: 


Breakfast:
3 scrambled eggs doused in Frank's Red hot with OOM, carrot and celery sticks

Lunch: Mixed greens salad with seasoned ground beef, OOM/hot sauce dressing and 3 jumbo olives.

When I said jumbo I meant it!

Dinner: 
Paleo slaw with seasoned ground beef, and Franks Red hot. 6 Jumbo olives for fat. (A side note here, when I say jumbo olives, I literally mean the biggest olives you have ever seen! I stumbled across them at Restaurant Depot, they are awesome! Great buttery flavor and each one is fun to eat too, they are so big it takes a few bites!

DAY 145 - Friday December 13th

Info:
Back is back at it again, but I think I have it about 90% figured out. When i don't exercise or get some sort of stretch or physical resistance, it starts to tighten up and causes pain. I have pretty strong legs, and I think the issue is that my hamstrings get tight and cause whats going on. Good reason to get off my butt and make sure I am doing something right?


Food Log: 


Breakfast:
Mixed greens salad (romaine, iceberg, carrots, celery) with seasoned ground beef, OOM/hot sauce dressing
 

Lunch: Mixed greens salad (romaine, iceberg, carrots, celery) with seasoned ground beef, OOM/hot sauce dressing. This time I got a little crazy though and added a boiled egg!

Dinner: Was getting tired of salads, so I created a burger. It's called the OMFG burger!!


OMFG Was this tasty!

OMFG Burger - fresh lean ground beef with onion powder, salt and pepper kneaded in, pan cooked and basted with Franks Red hot. Placed on a bed of romaine lettuce, AND, AND topped with Black olive, onion, Kosher dill relish, OOM, and smoked oyster tapenade. Yep it was OMFG delicious!

DAY 144 - Thursday December 12th

Info:
I slept like crap last night for some reason, couldn't fall asleep at all. Last time I remember looking at the clock it was 1:04am. That sucks when you get up at 4:30am.......Needless to say I was a bit tired today, when I got off work, I immediately crashed on the couch for a few hours. I wish I could attribute my energy loss to not eating right or something, but this was just straight exhaustion! Going to try and get to bed earlier tonight, hopefully it doesn't end up like last night again!


Food Log: 


Breakfast:
Mixed greens salad (romaine, iceberg, carrots, celery) with seasoned ground beef, OOM/hot sauce dressing
 

Lunch: Mixed greens salad (romaine, iceberg, carrots, celery) with seasoned ground beef, OOM/hot sauce dressing. This time I got a little crazy though and added a boiled egg!

Dinner: Cream of mushroom soup (Paleo Style) with seasoned ground beef added, and raw carrots and cauliflower on the side. Almond butter for fat. Like I said yesterday this soup needs a little tweaking, it's still really tasty, but too grainy. I think I have the solution, just need to make another batch and try it out!

DAY 143 - Wednesday December 11th

Info:
So I have been getting the recipes ready to post, and I have come to the conclusion that the soups (other than the buffalo) need a little more tinkering before I am ready to stick them on the site. I subbed coconut flower in to the cream of mushroom for example, and it made it grainy. In my opinion I don't want my soup grainy. So I need to do a few other experiments before I am ready to put those out. It was great in the casserole, but not so much as a standalone. And if I am not happy with it, I definitely don't want to pass it on to you guys. I'll be working on them over the next few weeks and get them up, but just wanted to let you all know what the status was on those. Buffalo chicken soup on the other hand.....the recipe is set, I just need to get some more photos and that one will be making an appearance (finally I know, sorry!) soon.

DAY 142 - Tuesday December 10th


Info:
Today I am naming D.O.T.S. Day of the Salads. That's all I wanted, and that's all I ate! I got creative for dinner, but essentially it was still just salad. That is all, carry on with your day! LOL (Sorry I didn't get any pictures, I actually plan on eating the romaine taquitos again tomorrow, I will be sure to get some pictures. They are quick, inexpensive, delicious and easy!


Food Log: 


Breakfast: Mixed green salad with seasoned ground beef, OOM/hot sauce dressing

Lunch:
Mixed green salad with seasoned ground beef, OOM/hot sauce dressing. Also had a TBS of Almond butter for fat content as I did't use as much OOM in my salad dressing this time.


Dinner: 5 big romaine leaves stuffed with seasoned ground beef, onion, black olives and hot sauce, and then wrapped in to "taquito's" Basically 5 rolled up salads LOL

DAY 141 - Monday December 9th


Info:
Tonight I got 5 lbs of bacon sliced and in the freezer, 5 lbs of season ground beef cooked and in the freezer/fridge so I have a good base going forward with the rest of the week. Found out my daughter has pneumonia in her right lung again (we think it is from when she choked on a hot dog) but that's kind of scary in itself, she was originally diagnosed with it 2 weeks ago and was given antibiotics, and it has seemed to come back. Hopefully with her new medicine we are able to get rid of it! Oh yeah and this is a bonus picture post since I didn't post any while I was in MI.


Where's the beef? Oh yeah it;s right there.....

Got my Rogue kettlebells in the other day as well, and have been practicing various movements with them so I can really get in to the Crossfit workouts going forward. Lots of good exercises to be learned. I was just checking out some videos on the kettlebell swings today, and found out I was doing them completely wrong.......OOPS!

So was leftover day again, and I created some noodle-less beef stroganoff with a Paleo cream of mushroom soup. Was a pretty tasty leftover dinner/lunch. Tomorrow I am hoping to get some bulk cooking done so there is a little more stability in my meals.

Breakfast: Sausage meatballs in sugar free marinara sauce with mushrooms and onions.

Last day in Michigan, not too much going on, just relaxing getting ready to hop on a plane. Hoping the weather holds out so I don't get stranded!

Breakfast: 3 hard boiled eggs, celery, carrot sticks, almonds for fat

Lunch:
Chicken salad with carrots, onion, mushroom, olive oil dressing and hot sauce

Dinner: Steak wrap (wrapped with romaine lettuce) with olive oil drizzle

DAY 135 - Tuesday December 3rd


Info: Got to go meet up with some old friends today for a little bit, and tour MI some more. Free day basically, but would have liked to have made it to my moms house to say hello. Can't be everywhere at once unfortunately.


Food Log: 


Breakfast: SF sausage, green beans, Larabar.


Lunch: Chicken breast salad with broccoli, olive oil and balsamic vinegar.


Dinner: Mediterranean  salad with Chicken breast, onions, cucumber, red bell pepper, kalamata olives, and olive oil dressing.

Snack: none
 

   
Exercise log: 25 push-ups, 25 sit-ups x 2 sets in hotel room

DAY 134- Monday December 2nd


Info: Ready to head out and face the MI weather again..... Got what we came here to do done in literally about an hour and a half's time, so went exploring. Found a few gun stores and ranges and gave my co-worker a tour of where I grew up. 



Food Log: 


Breakfast: SF sausages, green beans, handful of almonds


Lunch: Greek salad- Chicken breast, mixed greens, kalamata olives, cucumber, onion, with Olive oil dressing.


Dinner: Steak and broccoli. Drizzled with clarified butter, and dusted with garlic and salt.

DAY 133- Sunday December 1st


Info:
Ahh the lovely cold and gray Michigan weather......nice and humid which makes the cold worse! Drove all over creation today checking things out (I grew up about 70 miles South of Troy so a new area for me) Nothing too crazy.


Food Log: 


Breakfast:
Larabar, apple, carrot and celery sticks. Severly lacked fat and much protein for this meal.


Lunch: Mediterranean salad - Chicken breast, mixed greens, kalamata olives, cucumber, red pepper, onion. Missed that it had Feta cheese on it on the menu at the restaurant so spend a good amount of time picking that all off the salad. Olive oil dressing.

Dinner:
Chicken breast with broccoli, drizzled with some olive oil and garlic.

Snack: none

DAY 132- Saturday November 30th


Info: Like last night, no meals planned, but I had leftover green bean casserole, so I did what anyone would do, I stuffed an omelet with it.....All I can say is this just cracked my regular lineup, it was delicious! Head out to MI tonight to brave the cold!



Food Log: 


Breakfast: 4 Egg omelet stuffed with Paleo green bean casserole



Lunch: Leftover turkey breast, asparagus casserole, 2 tbs of melted ghee mixed in for fat

Dinner: SF beef jerky, Larabar, plantains. Got in to Troy MI at 2am, so finished up what little snacks I had room to take with me. Not the best meal, but not against the Whole30!


Snack: none
