Paleo Slaw

RECIPE:

Paleo...deliciousness



There are a few ways to do this this recipe, and both come out glorious, it's up to you but I prefer method #2. It makes it a lot faster and easier.

Method #1 grate your own cabbage, and carrots

Method #2 Buy already grated bags of coleslaw mix

This recipe is very easy, a little messy, but very easy! And trust me I made this size of a batch because it does not last! Everyone that has tried it LOVES it!




Ingredients:

  • 5 lbs of Coleslaw mix (fresh grated or buy bagged)
  • 1/2 - 1 1/2 cups of Olive Oil Mayo (not store bought, you can find the OOM recipe here)
  • Sea salt to taste
  • Fresh ground pepper to taste
  • 3 1/2 TBS Apple cider vinegar
  • 1/2-3/4 can of Coconut milk (get the kind in the soup style cans)
  • 3-6 TBS Pineapple juice(start with 3, add as needed)


Equipment needed:

  • Big mixing bowl (or several smaller containers)
  • Spatula or spoon
  • TBS measuring spoon
  • 1 cup measuring cup






Step 1: Put half of the coleslaw mix into your mixing bowls. It won't all fit unless you have a huge bowl, if you do, then dump it all in!








Add all wet ingredients, light salt and pepper, and then mix away!




Step 2: Add OOM, Coconut milk, cider vinegar, and pineapple juice. If you have to split the slaw mix in to separate bowls, make sure you spread out these ingredients equally. Add light salt and pepper and then begin to mix it all up.









After mixing there is more room!



Step 3: As you mix you will see that you have more room in the bowl/containers, as the ingredients mix, it weighs the cabbage down and gives you more room! Time to add the rest of the slaw mix! Or you can add a little at a time it all depends on the size of your mixing containers.









Ready to be devoured!




Step 4: Finish mixing the rest of the cabbage in with the ingredients. While you are mixing make sure you are tasting....add salt and pepper to taste.

(A hint on the slaw: If you prefer a vinegar based coleslaw, use more cider vinegar and less OOM and Coconut milk, and it you prefer creamier slaw, use a little more OOM (thicker) and/or  Coconut milk (thinner) The OOM will thicken the slaw up and the Coconut milk will thin the mixture. The beauty of this recipe is you can make it to your taste preference!





The flavors will blend together after about a half hour of sitting in the fridge. By all means it's ok to dig in now, but if you let it rest for 30 minutess it will taste even better!




Let me know what you think of this recipe, there were a lot of almost Paleo slaw recipes on the net, but none that tasted the way I wanted them to. This one is reaalllly close to KFC coleslaw, well except its added sugar free and actually good for you.......ENJOY!
