Spinach Salad with Warm Bacon Dressing

RECIPE:

I used to eat spinach salads with warm bacon dressing when I was younger and always loved it. Obviously eating Paleo style, these are kind of off the menu due to the copious amounts of sugar that is in the original recipes...well that is until now.......




 Ingredients:

  • Spinach
  •  4 pieces of Bacon (home cured/sugar free)
  • Date paste (Click for recipe)
  • 2 TBS Red wine vineger
  • 2 Hard boiled eggs
  • Mushrooms
  • Onions 
  • sea salt
  • fresh ground pepper


Equipment needed:

  • Med/Large frying pan
  • Small sauce pan
  • Knife
  • Cutting board

 Step 1: Cut up your spinach, mushrooms, eggs and onions to your liking and arrange on a plate. (1 salad is about 2-3 cups of spinach, 3-4 large mushrooms, 1 slice of onion cut in to slivers, and 1 hard boiled egg sliced in to 4-5 pieces.)

Step 2: Cook your bacon in a pan until it is nice and crispy. Remove from pan and place on a paper towel to soak up some of the extra grease. Crumble after a few minutes and set aside.

Step 3: Collect 3 TBS of bacon grease from your bacon pan and transfer in to a sauce pan, set to medium heat and add 2 TBS of red wine vinegar, pinch of sea salt, pinch of pepper and 2 TBS of date paste. You will want to stir and let it blend together for a minute or so. 

Step 4: Add date paste until your bacon dressing has reached the desired sweetness/acidic balance. Add a TBS at a time, stir in and taste until you get it where you like it.

Step 5: Drizzle over your plated salad and dig in!
