Paleo Pulled Pork

RECIPE:

I had 2 large pork loin roasts I got when I butchered my own pork loins. I had always loved  juicy slow cooked pulled pork, and decided to make one cave man style. The best part about this recipe is that it takes about 15 minutes to get ready, then you can leave and go about your day. The actual cooking takes a while, but it is very low maintenance!


In 8 hours you will have glory!!
Ingredients:
  • 3 TBS of paprika (smoked paprika gave this an awesome smoky flavor, but regular will do)
  • 2 TBS of sea salt
  • 2 tsp of black pepper (cut this in half for a less spicy flavor)
  • 1 tsp of cayenne pepper (cut this in half for a less spicy flavor)
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 cup pineapple juice
  • 1/4 cup apple cider vinegar
  • 3 TBS olive oil
  • 1 cup applesauce (organic, no sugar added)
  • 1 onion - peeled and cut in half
  • 3-5lbs of pork loin or shoulder, cut in half


Equipment needed:

  • Slow Cooker (mine is an 8qt so you may need to adjust recipe for smaller cookers)
  • Knife
  • Some sort of bowl to mix in
  • Cutting Board
  • Measuring cups - 1/2 and 1/4 or I just use a 1 cup and eyeball it
  • Measuring spoons - 1 TBS and 1 tsp again just eyeball it






Step 1: In a mixing bowl, mix together the first six ingredients (all of the spices) with a fork.



Step 2: Pour in the pineapple juice, vinegar, and olive oil and stir to form a paste. (Notice I didn't say applesauce too, save that for later!)










Step 3: Place the onion in the bottom of the slow cooker. Top it with the 2 pieces of pork and then pour the seasoning paste over all sides of the pork pieces. It’s okay if some of it drips down to the bottom. make sure the meat is well coated though!














Step 4: Turn the slow cooker on to low and cook for 7 to 8 hours or until the meat is tender enough to be easily shredded with a fork. Once it shreds easily, take your fork and break up all the meat in to bite sized shreds












Step 5: Add your cup of applesauce to the mixture and stir well. Leave on low heat for another 15-30 minutes and then serve!
