Paleo Fried Pickles

RECIPE:

I met, well pseudo know a pregnant woman on Facebook who was craving fried pickles, but didn't want to eat them because they aren't what we would consider healthy....in any way shape or form. Well not being one to let people down, I took the totally unhealthy fried pickle recipe, and ran it through the Whole360 ringer, and lo and behold it shot out a delicious AND healthy fried pickle recipe! Beware though, they are tasty, and may cause fights if you don't make enough! And by tasty I mean you may possibly try to inhale the whole tray of them.....You have been warned!

Seriously....seriously??? So good!



Ingredients:

  •  4 large pickles (I prefer kosher dills) I used Bubbies natural pickles, but Vlasic would be amazing too, just not as healthy.
  • 1 cup almond flour (or Bobs Redmill all purpose gluten free flour)
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 2 eggs
  • 1/4 cup coconut oil melted



Equipment needed:

  • Oven
  • Baking sheet
  • Brush
  • 2 bowls
  • Fork or whisk 

Step 1: Pre heat oven to 340°, then use a brush to put a thin coat of coconut oil on a baking sheet

Step 2: Whisk dry ingredients together to make "batter" in one bowl, and whisk the 2 eggs together in a separate bowl.

Step 3: Slice your pickles in about 1/8" slices, and dip them in egg to coat, then transfer to dry mixture, shake to fully coat pickles.

Step 4: Place battered pickles on the baking sheet that you coated with the coconut oil. Once you have them all on the baking sheet, brush tops with coconut oil (don't need to saturate, just get a decent amount on them)

Step 5: Bake for 15 minutes, and then check. After 15 minutes I turned on broiler for a few minutes to make them extra crispy. When they are done. the batter will start to brown and be crispy.

(Alternatively you can heat your remaining coconut oil in a pan on the stove and actually "fry" the pickles until they are crispy and golden brown. Either way turns out delicious!)

Step 6: (Optional) Add a little more salt/pepper to taste.

Try not to eat them all within the first 2 minutes!! (They are still hot!) If you have been missing out on these, well no more excuses! Plus its NFL Football playoff time, Whip up some Paleo wings and these at your party, and no one will even suspect they are healthy!






(Bonus: To make an excellent "Ranch" type dipping sauce for them so they are even more authentic....see below)

Dipping sauce:

  • 1/4 Cup of Olive Oil Mayo (Click for link to recipe)
  • 1/2 tsp of Paprika
  • 1-2 tsp of dill weed to taste (I love a lot of dill, some don't)
  • 2 tsp dried chives or 1 tsp of fresh chives (diced)
  • 1/2 tsp lemon juice
  • 1/2 tsp minced garlic, or 1/4 tsp of garlic powder

Mix all ingredients together, let chill in refrigerator for 30-60 minutes for flavors to meld and dried herbs to rehydrate.
