Cocout Crusted Tilapia

I had heard that fish and coconut was glorious, but sweet and fish honestly scare me. Then I decided to give it a shot...glad I did! This recipe is really simple, and really fast, will definitely be one of my regulars from now on.

 

RECIPE:
Nice and crispy!

 Ingredients:

  • 4 Tilapia Loins (4 peices) thawed or fresh
  • 1/2 Cup Unsweetened Coconut flakes
  • 1/2 tsp black pepper
  • 1/2 tsp of sea salt
  • 1/2 tsp garlic powder
  • 2 eggs
  • 3 TBS Almond or Coconut flour

Equipment needed:
  • Baking Sheet
  • Wire Rack
  • 1/2 Cup measuring cup
  • 1/2 tsp measuring spoon
  • Aluminum foil
  • Spatula
  • 2 flat bowls or tupperware
  • Oven
First things first, preheat your oven to 425° and let that get warmed up. Next up is preparing your baking rack. This is easier if you have a wire rack, if not don't worry you can bake it right on a baking sheet, just remember to flip it. I used the wire rack out of my toaster oven for this and it worked perfectly.






Line baking sheet with aluminum foil (keeps the mess down) and then place the wire rack on the sheet. That's it! Pretty simple right?

STEP 1: Now that you have that ready to go, its time to prep the coating. My coconut was a bit large so I chopped it up really quick in the food processor so it  would coat the fish better. You can see the difference in the pics below:

Step 2: Once your coconut is chopped up, combine all of the dry ingredients in one of your flat/tupperware bowls and mix it up well. Set that aside for now.















 




Step 3: Crack your eggs and put them in the 2nd bowl. Scramble them up well. Set up your egg bowl next to the dry ingredient bowl. Set them up so its egg 1st and dry ingredients 2nd, it's time to dip the fish!




Coat well, you want your dry mix to stick








Step 4: Dip your Tilapia in the egg and make sure you get a good coating on both sides. Quickly transfer it over to the dry mixture bowl.

Step 5: Press each side of your fish in to the dry mixture. Give it a firm push to make sure the coating sticks well to the fish. Repeat for the other side, and then place fish on your baking rack.







Ready to bake





Step 6: Put fish in the oven for 18-23 minutes. I set the timer for 18, and then checked it every minute or so, you want the coconut to be crispy and brown, but not burnt.Remove from the oven once its done, and dig in!!








Hope you all like this recipe, as I go through this journey I am finding that there are so many quick and simple ways to make good food, I am not sure why I thought fast food was necessary in the past!
