Boy do I have a treat for you guys with this recipe! Not only is it super easy, pretty inexpensive, and takes minimal equipment, it is also super tasty and good for you! So why is it called Holland pie you may ask? Well a friend of mine named Jason Holland who is also on his own journey to heath with Paleo introduced me to it....so hence the name Holland Pie.....much better IMO than breakfast quiche or frittata......Plus now I get to eat pie!

Ingredients:
- 12-15 eggs (see step 6 below)
- 1- 1 1/4 cup of your favorite (sugar free salsa) use more if you use 15 eggs.
- 8-10 cups of various veggies - You get to pick!!!! ** (I ALWAYS use celery, and onion as it gives the pie a great flavor, but you can use anything you want! I have used - broccoli, sweet potato, carrot, mushroom, green beans, black olives, artichoke, spinach, cauliflower, zucchini, and yellow squash, and all have tasted great!)
- 1 lb of meat of choice** (Again use what you have/like - I have used sausage, chicken, ground beef, pork, and chorizo so far!)
- Salt/Pepper to taste
- 2 TBS of Coconut oil
Equipment needed:
- Oven
- Sautee pan
- Glass baking dish/pie pan
- Whisk
- Mixing bowl
- Knife
- Cutting board
- Measuring cup (I use a large 4 cup measuring cup)

Step 3: Wash and chop all your various veggies in to 1/4" - 1/2" pieces.
Step 4: Heat 2 TBS of Coconut oil in sautee pan and toss in all of your veggies. You want to saute just enough that the veggies are still crunchy, but starting to soften. Add salt and pepper while sauteing. This will take about 5 minutes. Just before you are done sauteing add in your meat of choice, and mix well to distribute.
Step 5: Rub baking dish with coconut oil so your pie wont stick during baking. Just make sure it has a good coat on it, no need to saturate it. Then transfer your veggies from saute pan to your baking dish.
Step 6: In a mixing bowl combine all eggs and salsa. Whisk together so it is blended well, then pour over veggie/meat mixture in baking dish. You want to make sure all of your veggies/meat are covered with the egg mixture. If they are not, add 2-3 eggs and a 1/4 cup of salsa (blend together) to cover thoroughly.

Step 7: Pop in to oven and bake for ~1 hour at 400°. Pie is done when it is starting to brown along the edges and on top.
Step 8: Cut in to 8 equal squares. Serve hot or cold, it is excellent both ways!
